Turkey Pot Pie

Turkey pot pie is a necessary indulgence in the world of dieting and salads we all seem to be living in. Yoo Eatz gives us a straightforward, weeknight-friendly recipe for a comforting pot pie.

This holiday season came and went like the whirlwind it always is, and I sit here in the aftermath realizing that I have plenty of recipes to catch up on. So let's take a mini jaunt down memory lane to Thanksgiving, shall we?

Being the lucky recipient of my family's turkey carcass, I ended up with about 6 quarts of homemade stock, most of which sits in the freezer waiting for a chilly night when turkey noodle soup is a quick solution to the question "What's for dinner?" Unfortunately for the stock but quite happily for the rest of us San Franciscans, warm weather has taken up temporary residence in these parts, so soup has been on the back burner, so to speak. But back in late November when temps were still brisk in the low 50s (here, my East Coast friends may shout whatever expletives come to mind), comfort foods were definitely on the brain.

Purists will say that a pot pie must be just that: a pie complete with buttery, flaky crust on the top and the bottom. I get it (admission: I love Marie Calendar's frozen chicken pot pies dumped on a pile of hot white rice), but (1) who has time to whip up pie dough on a weeknight?, and (2) it's hardly a light meal. So I substituted store-bought puff pastry for the crust and focused on a rich, hearty filling for my turkey pot pie. For the recipe, read on.

The Museum of Modern Art played host to a bevy of beautiful women at "A Tribute to Pedro Almodovar" Tuesday evening in NYC. Two of Pedro's good friends and cinematic muses, Penelope Cruz and Antonio Banderas, were honorary cochairs for the soiree and past honorees at the annual event have included Tim Burton in 2009 and Kathryn Bigelow in 2010. Blake Lively and Chloe Moretz were both in stunning Chanel concoctions and had Karl Lagerfeld himself accompanying them to the event. Miranda Kerr traded in her edgy mom leather pants and high tops for a form-fitting Peter Pilotto dress and Nicolas Kirkwood heels and Sarah Jessica Parker pulled off a sleeveless pea coat.

Elizabeth Olsen, who continues to get high praise and award season buzz for her role in Martha Marcy May Marlene, was ladylike in black while Emma Stone kept up her rigorous red carpet schedule. Emma and her man Andrew Garfield are starting to go public with their relationship, though he wasn't by her side for this arrivals line. In fact, most of the lovely ladies were on their own for the evening, though Drew Barrymore stuck close to her boyfriend Will Kopelman.

A Reader Recipe: Asian Peanut Noodle Salad

We love healthy versions of our favorite takeout foods, and so does FitSugar reader For The Love of Fiber, who posted this recipe for Asian peanut noodle salad in our Healthy Recipe group.

Here’s a nice vegetarian entrée with a healthy dose of fiber and tons of antioxidant-rich veggies! Inspired by a recipe I found in Shape Magazine a few years back, it’s really tasty and makes great leftovers for lunch. If you’re on a budget, peanuts can be substituted for macadamia nuts – no one will think any less of you. And if your preference is meat, swap out the tofu for some chicken breast. Serve with steamed broccoli and you have yourself a taste of the Far East in the comfort of your own home, minus the MSG. And I made this with Mara's Pasta - quite possibly the best-tasting whole wheat pasta on the planet. It's brand new and doesn't taste like cardboard. Pretty awesome.

Use organic ingredients when possible, particularly if you’re going meat-free with the tofu. Look for a quality brand that is organic and GMO-free. It’s worth the extra money.
